A cocktail with Karl Cooney

We like to add a personal touch to every event we host and to put a face to a name. Every month we showcase a different person who helps to bring your event to life. This month it’s our resident drinks and cocktail expert Karl Cooney.

Karl joined us after having previously run the bars at The Clarence and The Morgan hotels in Dublin. He makes it his mantra to never serve the same cocktail twice, believe it or not.

With this and the launch of our summer party packages in mind we’ve asked him to share one of his bespoke cocktail recipes with us. Perfect for the summer season to enjoy on our roof terrace or one of our balconies overlooking the Thames and the London skyline, take a look at the ‘Plata Niebla’ below.

This cocktail is fresh and full of life with tonnes of summer energy. We shake with mint leaves to give the cocktail an intense vibrancy which is lifted by the chartreuse and tequila and balanced out with a touch of smoky mezcal. The cocktail is a beautiful summer green and the ice cube is a light blue, however when they both combine, your cocktail will slowly change to a vibrant purple and is garnished with bright edible summer flowers.

Cocktails

Plata Niebla

Ingredients:

  • 30ml Olmeca Altos Plata
  • 10ml Quiquiriqui Mezcal
  • 15ml Simple Syrup
  • 20ml Fresh Lemon Juice
  • 15ml Lillet Blanc
  • 10ml Green Chartreuse
  • 6 mint leaves Served over a Butterfly Pea flower tea infused Ice Cube

Method:

Add all ingredients to a cocktail shaker, fill with ice and shake. Double strain and serve over large ice cubes in a rocks glass. Garnish with edible summer flowers.
To make the clear Pea Tea ice cube, infuse butterfly pea tea and freeze slowly over 24 hours in a polycarbonate box to ensure clarity.
